bear meat recipe???

got some bear meat from Alaska ,and was wondering if anyone on the site had an outstanding recipe,i am looking for an exceptional one someone uses, not one off the internet that no one has tried, thanks for the info guys

Ok, you season it with Season All, Salt And Pepper, fresh garlic, touch of Worchester, touch of red pepper, and a tad bit of beer! Then you brown each side of the roast quickly, then put in crockpot, with carrots, celery, onions, and potatoes! Fill water to cover ingredients in crockpot, then put a couple of drops of Louisiana Hot Sauce! Put on high and cook for six hours!..............then drink all the beer, take crockpot and ingredients and throw it as far as you can of your back porch!!! lol

If it's an Alaskan grizzly that stinks as bad as the 8 footer I just skinned last weekend, I don't see how it's edible. The meat and fat on this one smelled bad of oily salmon- no way I'd eat it! They must absorb the smell from eating so much fish.

lol you guys are funny, this is a black bear, i have heard the stories of the bear that has been eating fish and carrion , and the wonderful taste it leaves in your mouth , fortunately this bear was eating grass and berries when he was killed, my friend assures me it is as sweet as they come. as for throwing it out the back door ... do you think it will keep the coyotes away?

cluton that recipe is close to the one i chose to use, i will let you all know if it was worth the effort to cook it

aboman, congrats on the grizzly , my friend also brought down what he called Eskimo candy , (smoked salmon belly i think he said) very very oily smoked fish , dosnt even freeze right , too much oil, very tasty if you like fishy fish, i do. he described some grizzly he had about the same as you described , said it didnt hold a candle to the Eskimo muk tuk (whale blubber i think,) worst of all he said was the seal oil that someone had him try ,that had dripped onto a tarp under some seal meat being smoked, from the look on his face in describing it, i think i will just believe him on that one, i got caribou sausage , and moose burger too , cant wait to try them

I've had bear several times in Russia and Finland, and the best was simply a rump roast cooked like a small prime rib, another good one was minced meat prepared in dumplings with a sour creme sauce. A royal dish for the Kaiser and other members of German/Austrian royalty was Bear and Spaetzle (picture amish style beef and noodles, but with thicker chewy pasta.)

I had bear one time in Montana and it was horrible, greasy and smelled/tasted awful. They stewed it for hours with veggies to try to get the stink out, but it was still there.

I think it depends on the cut you have, if you've got shank meat (lower legs), go with an osso buco or similar stewed dish. If you've got a roast, roast it. If you've got a better quality steak, maybe go with a stroganoff type dish (not over cooked.)

Bruin does have a wild game flavor, but if you want something mild stick with corn fed beef or chicken.

Got some from my brother several year ago. Tryed different things and the only one that were even close to OK were making a stew like with beef. I think the stewed tomatoes helped hide the "flavor"!

thanks josh and mark , ill let it marinade till morning and then crock pot it like stew, for a few hours , if all gos well ill let ya all know what the recipe was, if not ill take clutons advice and throw it out the back door
